Today we will make yummy Semolina Modaks.
Which can be prepared instantly and have a unique taste to them.
These taste amazing.
Ingredients
Semolina-1/2 cup (100 gms)
Milk-1 cup
Ghee-2 tbsp
Almonds -10 to 12 (finely chopped )
Pistachios-20 to 25 (finely chopped)
Green cardamom-1/2 tsp ( 7 to 8 )
Powdered sugar-1 tbsp
Saffron strands-20 to 25
Condensed Milk - 1/2 cup
Method
Let's start preparing Semolina Modaks.
To make semolina modaks,
first of all make dough from semolina, Take a pan. Heat it.
Add ghee to the pan.
after that add semolina. This is 1/2 cup semolina.
Roast the semolina by regularly stirring it ,
till it slightly changes color.
Keep the flame medium.
Take 20 to 25 saffron strands,
put a little milk , till the saffron gives off color.
and Add 2 tbsp milk to the saffron starands and mix it.
We have roasted the semolina on medium for full 8 to 9 minutes.
Semolina has slightly changed color.
It is fragrant.
You don't need to roast it much.
Semolina is roasted and ready,
now add milk to it.
Reduce the flame and stir the mix too.
No lumps should form
as we have roasted the semolina in ghee.
Add saffron milk to it too.
Saffron is optional,
but it gives off a yellowish tinge to the modaks
and enhances its taste too.
Add 1/2 cup condensed milk to it too.
Now Mix it well and cook until it forms a dense dough.
Slightly increase the flame we had reduced it.
Semolina is cooked and is dense.
Dough is ready.
Now Take it out in a separate thali and cool it.
Turn off flame.
Let the dough cool down.
Meanwhile let's prepare the stuffing.
Take a pan, turn on flame.
Add 10 to 12 finely chopped almond pieces,
25 to 30 pistachios finely chopped, slightly roast them.
You can use them without roasting too.
Roast them to remove moisture,
roast them for half a minute.
These are roasted.
Turn off flame.
Take 1/2 tsp cardamom powder made from 7 to 8 cardamom.
Add 1 tbsp powdered sugar too.
Mix a little dough in it so that the stuffing binds.
Mix all ingredients well.
All ingredients are mixed well.
Stuffing is ready.Take it out in a bowl.
Dough we prepared is slightly hot, press it with a spoon.
Now make modaks from it.
Now We are using modak moulds to make the modaks.
With these, modaks are prepared really easily.
We have removed the pin that closes it.
Modak mould is easily available in the market.
Now Put a little dough in the mould, that fits in the mould.
Now Take a small spoon that goes inside the mould,
Press and fill the dough in the mould.
Press it with the other end of the spoon.
Leave a little space in the centre.
as we need to add stuffing in it.
Stuffing is ready.
Now Take out a little stuffing, and take a small spoon.
Put stuffing in it and press it.
Take a little dough and put it.
Close it on all sides and make it even with hands.
After that Open the mould and place the modaks in a separate plate.
Modaks are ready.
Prepare all the modaks likewise,
Close the mould again.
Take out the dough and put it in the mould.
Pressing it is important.
Because you will only get proper shape when you press it.
Open the mould.

These are mouth drooling and sumptuous modaks.
These are really easy to prepare.
While roasting the the semolina make sure,
you regularly stir it.
Roast till it changes color.

You can prepare it easily.
Keep them out in open for 3 to 4 hours to dry.
Fill them in a container
and you can keep in a fridge and relish for a week.
